Crockpot Chicken Tacos are easy, convenient, and FULL of flavor! Tender chicken, sweet corn, spicy salsa, crunchy lettuce, and fresh cilantro all topped with creamy greek yogurt! SO many flavors mixed together for the PERFECT taco!
If you’ve been following Munching the Globe on Instagram and Facebook then you know Ty and I just got back from Ft. Lauderdale and it was SUCH a blast! We stayed at Margaritaville and (of course) made trips to restaurants both on and off the resort – don’t worry, I will spill all the details on upcoming posts!
Margaritaville is SUCH a great location that opened last year so everything looks modern, chic, and pretty. Not to mention the resort is huge – restaurants, bars, shops, pools, their own private beach, and so much more! We already decided that we WILL be back. No, if, ands, or buts about it. We are heading back…. And hopefully the weather cooperates this time!
But sadly, since we were away I didn’t have a chance to finish my post for Friday.. I’m sorry! BUT I am here today to tell you about a super delicious and simple Crockpot Chicken Taco recipe. What better time to make Crockpot Chicken Tacos then a Saturday when all you care to do is get cozy with a movie, blanket, and yummy food. Or maybe blast Christmas music and wrap presents 🙂 To each their own, right? 😉
Being back in Maryland with our 30 degree weather (and more recently single digits) we’re craving a meal that will immediately warm us and heat our insides! Crockpot Chicken Tacos are the answer – flavorful, colorful, and full of spices that will leave you feeling warm and satisfied!
An easy crockpot recipe that anyone can make! Not to mention, there is hardly any dishes to clean. I’m not sure you can ask for much more than a hassle-free and simple dinner!
Tender chicken simmered with spices for hours lets the chicken capture all the different flavors.
Start by adding chicken to the crockpot along with chili powder, garlic powder, and cumin. Dice green peppers and onions and add to crockpot. Let sit on high for 4 hours.
After 4 hours in the crockpot, draining the chicken juice is a MUST! There’s NO drippy tacos with this recipe. #win #nodrippytacos #ever
Once drained, add salsa, drained corn, and rinsed black beans. Let warm in crockpot another half hour.
Finally, you’re ready to load up your taco! Load your delicious taco shell with: desired amount of crockpot mixture, crunchy lettuce, a dollop of creamy greek yogurt, and drizzled with Ortega medium taco sauce! Don’t forget to sprinkle a couple cilantro leaves to top it all off.
Spicy, sweet, crunchy, these tacos have it all! Crockpot Chicken Tacos took some time to perfect as most crockpot tacos leave you with dripping tacos, a plate full of juice, and liquid running down your arm. No, thank you.
We’ve tried crockpot chicken taco recipes in the past and they’ve had good flavors but we were always left with puddles on the plate… this recipe delivers great flavors and a puddle free taco!
IF you don’t mind a drippy taco then go ahead and add the full salsa jar. Otherwise, just add 1 and ½ cup of salsa.
- 1 ½ lb chicken breast
- ½ onion, diced
- ½ green pepper, diced
- ½ tbls chili powder
- ½ tbls garlic powder
- ½ tbls cumin
- Once chicken is removed from crockpot:
- ½ cup sweet yellow corn, drained
- ½ cup black beans, rinsed and drained
- 1 ½ cup Pace medium salsa
- Soft taco shells
- Ortega medium taco sauce
- Fresh cilantro
- Greek Yogurt
- Shredded lettuce
- Dice up onion and green pepper. Add chicken, onions, green peppers, chili powder, garlic powder, and cumin to crock pot. Let sit on low for 4 hours or until chicken is fully cooked.
- Once chicken is cooked, drain the crockpot so the juice is removed.
- Shred the chicken using a couple forks to tear apart. It should be tender and easily pull apart.
- Add 1 ½ cup salsa, drained corn, and black beans (rinsed and drained). Let sit on low for 30 minutes to help the flavor mix together and warm the corns and beans.
- Add desired amount of crockpot chicken mixture to soft taco shell and top with a couple cilantro leaves, shredded lettuce, drizzle Ortega taco sauce and add a dollup of greek yogurt.
These easy Crockpot Chicken Tacos create a flavorful dinner that is low maintenance and simple!
We’ve made these Crockpot Chicken Tacos several times and they NEVER disappoint! Chicken breast, spicy salsa, corn, lettuce, and greek yogurt topped with cilantro all wrapped in a soft Mission Taco tortilla! There’s no excuse not to make these as your next dinner.
